21 Day Fix Banana Bread Muffins



Containers = 1/2 purple, 1/3 red, 1/3 yellow, 1/2 tsp per muffin

Ingredients 

  • Three ripe Bananas
  • Two Eggs
  • 3/4 cups of Quick Oats
  • 2 tablespoons of honey
  • 1 teaspoon of Baking Soda
  • 1 teaspoon of Baking Powder
  • 1/2 teaspoon of Cinnamon

Instructions

  1. Preheat oven to 350 degrees
  2. Line cupcake/muffin tin with liners or use coconut oil to grease them (I prefer the liners - silicone or foil)
  3. Place all of the ingredients in a blender and blend until mixture is smooth (may also use a food processor)
  4. Evenly pour the mixture in the twelve muffin tins
  5. Bake for 18-22 minutes or use the toothpick trick (it comes out clean)
*Your muffins are not made with flour so they will have a sunken appearance. Looks aren't everything! They taste great :) 

Serves: 12        Prep Time: 10 minutes        Cook Time: 18-22 minutes

5 stars!  Refrigerate muffins to grab & go or microwave them for 25 seconds for a warm snack (add coconut oil for a butter substitute).

  1. Do the oats give it a strange texture? Should I blend the oats to make them fine (similar to flour)?

  2. I just put them right in the blender with all the other ingredients. They're also quick oats so they're texture is soft already.

  5. Can i use coconut sugar? If so, how much is equal to the 2 tbsp?
